火のエビ in japanese [ Hai No Ebi ] Grilled Shrimp. Everyone loves grilled shrimp. Several options to explore here. A customer reached out to us about his favorite tiki bar that served. "Volcano Shrimp" and the grilled jumbo shrimp were stacked next to each other so the shrimp formed a volcano. Love this idea, but getting the shrimp to shape into a "J" instead of a Circle might be challenging
Another recipe that stoop out was using chimichurri with shrimp. We will have to play with this to get it to fit into our Hawaiian / Tiki theme. Add pineapple!

I like the idea of a cocktail sauce, but wasabi based instead of horseradish. or both horseradish + wasabi. This dish could easily fit into a tiki menu or a japanese menu
this is a fun presentation. the pic above is probably a passed appetizer dish where a customer picks up a little cup and gets 2 bites of shrimp. we could do something similar with our 4-compartment plates that are otherwise un-utilized.
this is a terrible pic / presentation, but it hints at what a "volcano" shrimp presentation might look like. probably doest work for a grilled shrimp dish. lends itself to tempura w/ nobashi
if we could get a shrimp to look like this off the grill we might have a chance....
