CHICKEN


Tamari - 2 quarts

Mirin - 2 cups

chopped garlic - 1/4 cup

ginger puree - 1/4 cup

Green Onion ( the left over white ends ) - 1/4 cup

4 dried shiitake mushrooms


blend it all together






CAULIFLOWER

sake

1 cup ginger puree

1 cup chopped garlic ( fine mince chop )


fill container to 1/2 with equal parts tamari + sake, add ginger puree and garlic. stir together




SUSHI EBI

300g ginger juice ( from gari ginger (pickled))

100g rice wine vinegar

garlic

ginger

apple
