Lobster mix is 100% cooked RTE product. because it is shellfish, care must be given to preparation and storage to avoid cross-contamination with other products.
3 packages lobster ( thawed )
1/2 cup mayo
1/4 cup miso glaze
4g chopped chives ( super finely chopped )
3g salt
Fold together carefully, we don't want to break apart the lobster too much. large claw pieces should be cut in half.
NOTES: remember to pull lobster at the end of the night or even during shift so lobster has a chance to thaw overnight in the refrigerator.
Avoid "quick-thaw" - if necessary the lobster CAN be thawed quickly under running water, but this procedure causes the lobster to have a different texture.
