Mushroom Mix

4 quarts dry shiitake mushrooms [ fill an 8 quart container 1/2 full with dried shiitake mushrooms. fill 3/4 full with tap water. weight the mushrooms . cover

soak shiitake overnight


after 24 hours ( overnight )

drain mushrooms... ( from water that they soaked in )


add all mushrooms to ...

1 pint sugar

1 pint soy sauce

2 1/2 quarts water


bring to boil / immediately reduce to simmer

simmer 30min - 45min


after 30 min check consistency .


remove shrooms from water, allow to cool, slice into strips.


shred 6 quarts of King Oyster Mushrooms using a fork. just like shredding pork or chicken. cut the big ones in hlaf down the middle through the stem so they sit flat on the cutting board





cut up 1 pint of the white ends off the green onions ( the unused waste part of the scallion )

saute teh onions in 1/2 cup olive oil over LOW HEAT

add oyster mushrooms


once oyster mushrooms are golden brown ( not dark ) add in the shiitake mushrooms


taste them regulary, add salt and pepper as necessary


cool on sheet pan, in walk-in


store in container
