salmon tartare is a 100% RAW product and requires getting salmon from the sushi line.

salmon tartare does not invlove "scraping" salmon but rather just chopping the smaller pieces / cuts / scraps that cannot be used for sushi / sashimi

1 kg chopped salmon ( appx 2.2 lbs )

1/4 cup yuzu mayo

1/3 cup capers

1/4 cup chopped red onion

1/8 cup chives ( fine chop )

2 tsp lemon juice

1 TBSP mirin

1 tsp black pepper

1/2 tsp salt

mix together in large bowl, store in 1/6 pan. always use same size pan for storing salmon tartare.

NOTES: Measurements for a precise recipe are difficult . when making salmon tartare on the fly try to use similar proportions and do not substitute other ingredients.
