SHROOMS - ( shiitake )

1. Rehydrate the Mushrooms

  • Rinse the mushrooms under cold water to remove any dust or grit.

  • Soak in cold water (not hot) in a bowl or container, fully submerged, for 6–12 hours (overnight). This slow soak develops a deeper umami flavor. PREFERRED!!

  • Optional shortcut: Soak in warm water for 30–60 minutes, but flavor won’t be as rich.

2. Simmer for Flavor

Once rehydrated and softened:

  • Remove and slice thinly (remove stems if tough).

  • Place in a small pot with:

    • 1 cup of the soaking liquid (strain through cheesecloth or coffee filter)

    • 2 tablespoons TAMARI

    • 2 tablespoon MIRIN (or sugar)

    • 2 teaspoon SAKE (optional)

    • 1/4 cup SUGAR

  • Simmer gently for 15–20 minutes, until the liquid reduces and mushrooms absorb flavor.

3. Cool and Use

  • Let cool completely.

  • Use the seasoned, sliced mushrooms as a filling in your sushi roll.
