1. Rehydrate the Mushrooms
Rinse the mushrooms under cold water to remove any dust or grit.
Soak in cold water (not hot) in a bowl or container, fully submerged, for 6–12 hours (overnight). This slow soak develops a deeper umami flavor. PREFERRED!!
Optional shortcut: Soak in warm water for 30–60 minutes, but flavor won’t be as rich.
2. Simmer for Flavor
Once rehydrated and softened:
Remove and slice thinly (remove stems if tough).
Place in a small pot with:
1 cup of the soaking liquid (strain through cheesecloth or coffee filter)
2 tablespoons TAMARI
2 tablespoon MIRIN (or sugar)
2 teaspoon SAKE (optional)
1/4 cup SUGAR
Simmer gently for 15–20 minutes, until the liquid reduces and mushrooms absorb flavor.
3. Cool and Use
Let cool completely.
Use the seasoned, sliced mushrooms as a filling in your sushi roll.
